It has been some time since a new restaurant opened in Ultimo, and Metro Aspire Hotel Sydney‘s newly opened Gumtree Restaurant doesn’t disappoint.
Opening its doors last month, the restaurant recently joined forces with the Pyrmont Ultimo Food & Wine Festival to host a 4-course degustation dinner to give local residents a taste of what they can expect in the future. The night was deemed a great success with many members of the Pyrmont Ultimo Chamber of Commerce attending the event.
The new Head Chef at Gumtree Restaurant, Sanju Singh, has more than 20 years experience. Singh trained in Adelaide before he moved to Sydney to take up an executive chef position at Panthers Penrith, Q Station Retreat in Manly, Cyprus Lakes Resort Hunter Valley, and Crowne Plaza Dubai.
Singh sources most of his produce locally – fresh seafood from the Pyrmont Fish Markets and fruit and vegetables from Flemington Markets.
He describes Gumtree’s seasonal menu as modern Australian cuisine with an Asian twist, using fresh local produce with a nod towards paddock to plate.
The menu includes popular staples including charred grain fed Riverina scotch fillet, twice cooked Murray Valley pork belly, local market fish, chargrilled chicken breast, and a delicious variety of pizzas suitable for vegetarians and chilli lovers. Singh’s signature dish is a North Indian style lamb achari gosht slow cooked in over 20 spices with steamed rice and all the accompaniments.
While the quality of the food is a major drawcard, so is the magical ambience of the restaurant, particular when it is beautifully lit up at night. The restaurant’s outdoor area has a glass roof over which runs a waterfall which quietly cascades onto a lush garden wall of tropical greenery.
The restaurant’s buffet breakfast is served from 6.30-9.30am during the week and until 10am on the weekends. Locals and in-house guests can choose from fresh seasonal fruit, fresh juice bar, breakfast cereal, quality breads/toast, excellent coffee and pastries to hot food made from the best ingredients.
Gumtree Restaurant is part of Metro Aspire Hotel Sydney, part of the Metro Hospitality Group.
